Broccoli salad? This is quickly becoming a quintessential side dish at our house – for BBQs with friends, or just dinner at home with the family. Slightly sweet and oh, so delicious. You’ll definitely be “bringing this broccoli salad again”.
“Bring it Again” Broccoli Salad:
- (1) Large Broccoli Crown
- (1) Small Red Onion
- 1/4 Cup Cooked Chopped Bacon (or more, I often just use the leftover bacon from breakfast that morning or even the “REAL” jarred bacon bits to save time)
- 1/2 Cup Shredded Cheddar Cheese (I usually go with Sharp Cheddar and the thicker stuff)
- (1) Package of Ramen Noodles
- 1 Cup Mayonnaise
- 3 TBL White Vinegar
- 1 TBL Lemon Juice
- 3 TBL Sugar
- 1 TSP Poppy Seed
Here’s What You’ll Do:
First, chop up your broccoli, red onion, and bacon and add to large bowl (preferable one that uses a tightly fitting lid). Next, discard the seasoning packet from a package of Ramen Noodles and using your hands, crush up the uncooked noodles and add to the vegetable mixture along with the Cheddar Cheese. Set aside.
In separate bowl, add the remaining ingredients (mayo, vinegar, lemon juice, sugar and poppy seed) and stir until mixture becomes nice and smooth. Shortly before you’re ready to serve, pour the dressing mixture over the salad. Put the tightly fitting lid on and shake until the broccoli mixture is evenly coated with dressing. Voila!!
