Crock-Pot Rosemary Garlic Chicken & Potatoes
You know those super cheap packages of chicken quarters at Dillons {Kroger} stores? The ones that are already pre-seasoned? We can usually get those for about $3 – $4 for the entire package – plenty to feed our family of four.
But how do you cook them?! However you want! Paul does an amazing crock pot dish that requires about 5 minutes of prep, and costs about $6 for the entire meal. Many of these ingredients are couponed or things you already have.
Here’s what you’ll need:
- 4 Large Chicken Quarters (I buy the already seasoned ones at Dillons that are usually around $3 or $4)
- Red Potatoes (enough to line the top of a crock-pot, I’ll usually buy these at Aldi for super cheap)
- 2 Stalks of Celery (sliced)
- 1 Packet of Lipton Recipe Secrets Onion Soup & Dip Mix
- (1) 14 oz. Can of Chicken Broth
- 1 TBL of Minced Garlic
- 1 TBL of Rosemary
- 1-2 TBL Butter (optional)
- Salt & Pepper
Directions:
This is a super easy recipe. I’ll buy one of the pre-seasoned 4 packs of chicken quarters from Dillons and lay them in a thigh to leg formation in the bottom of the crock-pot. Then just toss in your sliced celery, garlic and dump in the Lipton Recipe Secrets Onion Soup Mix and pour in the chicken broth. Add enough red potatoes to line most of the top op the crock-pot (if they’re large either halve or quarter them).
Wanna save this for later?
Throw in a Tablespoon or two of butter (or substitute with a drizzle of olive oil), sprinkle the Rosemary, some salt & pepper and your done. Set your crock-pot to low, cook for 6-8 hours without stirring and eat at your leisure. Pretty easy, right? This is a great meal to throw together on the cheap (I think it cost me around $6 to feed the entire family) and literally only takes 5 minutes to prep. I hope you enjoy!
