Hallelujah! It’s grilling season! Our family grills out at least twice a week! Over the next few months I’m going to be posting some amazing recipes that are perfect for grilling. First up, a grilled grilled cheese sandwich!
Quick back story. My hubby (not Paul, this is a guest post by Amanda G. 😀 ) is from South Africa and when we met he introduced me to this sandwich and it’s been a favorite of mine ever since. Every time we have company and we make these, they are always a hit! Super easy and amazingly wonderful. In Afrikaans it’s called a Braai Broodjie (Bry Broochie) but for the sake of not getting tongue tied we’re going with Grilled Grilled Cheese 🙂 The recipe below will yield 5 sandwiches.
Grilled Grilled Cheese :: Quick & Easy South African Recipe
What you’ll need:
- 10 slices of bread
- 1 large tomato, sliced thin
- 1 onion, sliced thin
- 1-8 oz pkg shredded cheddar cheese
- butter
- chutney (we order ours online but peach or apricot jam will work in a pinch – do not skip this!)
Directions:
Take 2 pieces of bread and butter as you would for a grilled cheese. Be sure not to use too much butter as it will get soggy and cause a hole. Place the 2 buttered sides TOGETHER and place on a tray. This step helps with getting them on the grill 🙂 Repeat until you have 5 sandwiches on your tray. Then put a thin layer of chutney (apricot jam) on the top piece of all sandwiches.
I’ve made these sandwiches tons of times! The jam is VERY important. It has 2 purposes: adds moisture and a TINY bit of sweetness. I’ve made them without a few times because I failed to have had chutney and the sandwiches were certainly lacking. So add that jam! 🙂
Wanna save this for later?
Next layer on tomato and then onion. Lastly, dump on all that cheese! Oh Yes! 😉 You want to put these on the grill when your fire is low… if it’s too hot, they burn! So we typically do these last. When you put them on the grill take only the top piece of bread (the one with all the goodies on it) and put it on the grill. Take the other piece of bread and place it on top. Repeat until all the sandwiches are on the grill. Close the grill so the cheese will melt. About 2-3 mins later flip your sandwiches. You’ll need 2 hands 🙂
Tip: Flip them slowly! Grill until the other side is toasted and then remove them from the grill and ENJOY!
Don’t these look DELISH?! Thanks, Amanda!
