Bring it Again Broccoli Salad with Ramen Recipe

Broccoli salad is a quintessential side dish at our house – especially for BBQs or just dinner at home with the family. Tangy and slightly sweet and oh, so delicious. You’ll definitely be bringing this Broccoli Salad with Ramen again and again.

Broccoli Salad with Ramen Noodles

What you’ll need for the salad:

(1) Large Broccoli Crown
(1) Small Red Onion
1/4 Cup Cooked, Chopped Bacon
1/2 Cup Shredded Cheddar Cheese
(1) Package of raw Ramen Noodles

What you’ll need for the dressing:

1 Cup Mayonnaise
3 TBL White Vinegar
1 TBL Lemon Juice
3 TBL Sugar
1 TSP Poppy Seed

Directions:

Chop up your broccoli, red onion, and bacon and add to large bowl (preferable one that uses a tightly fitting lid).

Discard the seasoning packet from a package of Ramen Noodles and, using your hands, crush up the uncooked noodles and add to the vegetable mixture along with the Cheddar Cheese. Set aside.

In separate bowl mix the remaining ingredients: mayo, vinegar, lemon juice, sugar and poppy seed until mixture becomes nice and smooth. Shortly before you’re ready to serve, pour the dressing mixture over the salad. Put the tightly fitting lid on and shake until the broccoli mixture is evenly coated with dressing. Voila!!

Ingredients

  1. This looks sooo good, Ashlea! Any ideas for substituting the raw onion? My gut could never tolerate it raw, and can't handle peppers or mushrooms, either. Would sprinkling dry onion powder into the salad be ok, or no? Regards, Jean P.S. THANK YOU FOR WHAT SOUNDS LIKE a basic poppyseed dressing! My favorite!
