Baked Avocado Fries

Are you an avocado lover? Whether it be guacamole, sliced on a BLT sandwich, served with a little salt and a spoon or breaded and baked, I sure love me some avocado!  As an avocado lover yourself, I know that you’ll love these Baked Avocado Fries!

Avocados are also relatively inexpensive so we are getting a healthier and super inexpensive snack. Good fat + baked (not fried) avocado + crisp panko bread crumbs = WIN.

Ingredients:

  • 2 Avocados
  • 3 Egg Whites
  • 1 Cup Panko Japanese Style Bread Crumbs
  • Salt & Pepper (to taste)

I have found that the firmer the avocado the better the finished product.  Not TOO firm of course, just on the cusp of ripeness.

1. Cut your avocados in half length-wise. Remove the pit and cut into strips (or “fries”).

2. In a small bowl mix the flour with a pinch of salt and pepper.

3. In a second bowl mix the whites of the eggs.

4. Place Panko bread crumbs in a third bowl.

First, you’ll want to coat the avocados in the flour mixture, then dip in the egg whites, then coat with Panko bread crumbs and place onto a cookie sheet.

5. Broil on low until golden brown (about 6-7 minutes in my oven, be sure to watch yours!).

6. After golden brown, turn the fries and broil for another 2-3 minutes or so, keeping a close eye to avoid burning.

THAT IS IT!  Sprinkle with a little salt and serve with Ranch dressing if you like, or alone.  I like both! I hope you enjoy this light, crispy {healthy} treat!
