We all know queso dip is the bomb. Whether you use ground beef or sausage or no meat all. Maybe some beans? This family favorite uses white queso with black beans and corn and let me tell you – your family will be begging for it again and again.
Black Bean & Corn White Queso Dip
I love that this uses white queso instead of the traditional yellow Velveeta. The cilantro takes it to a whole new level but if you’re not a cilantro fan you could leave it out entirely instead.
1- Velveeta White Queso Block of cheese (32 oz.)
1-can of Rotel Diced Tomatoes
1-can of black beans (drained)
1-cup of corn (frozen)
1-can of Diced Green Chilies (4 oz)
1/4 cup of fresh Cilantro (chopped)
1/4 cup milk
juice of one lime (optional)
This has got to be the easiest recipe ever. Literally throw everything in your slow cooker and let it melt. I throw the cilantro in last, then stir and ENJOY!
We use this little slow cooker like this one and it is perfect for group gatherings or for taking to a pot luck etc. Doesn’t get much easier than that!
