One thing I love? Sneaking vegetables into my kids’ diet when they least expect it. Zucchini bread? My kids devour it and I love it and it yields two entire loaves (or 24 muffins) and you can’t even taste the vegetable! This is also great to give in lieu of fruit cakes over the holidays! 😉
You don’t even need to peel or dry the zucchini, just grate it! Keep in mind this is a “bread” so this is not very sweet. If you’d like more of a zucchini cake or a sweeter muffin, simply add 1/4 C more sugar.
Easy Hidden Zucchini Bread or Muffins Recipe
3 C. flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon
1 1/2 tsp pumpkin pie spice
3 eggs
3/4 C vegetable oil
3 tsp vanilla
1 C. sugar
1 C. dark brown sugar (adds a nice flavor to the bread)
1 C. walnuts (don’t leave these out 🙂 )
2-3 C grated zucchini, roughly 1 large zucchini will produce 2 C.
Preheat the oven to 325. Sift (or mix) flour, baking soda, baking powder, cinnamon, pumpkin pie spice and salt in a bowl. In a separate bowl beat the eggs, oil, vanilla, and sugars. Combine the wet and dry ingredients. Once well mixed, stir in the walnuts and grated zucchini. Pour into two greased bread pans or into two greased muffin pans.
Bake 30 – 35 minutes depending on your pan. If doing muffins you’ll want to bake them closer to 30 than to 35 minutes. Spread on just butter and you’ve got a delicious bread!
