The BEST Summertime Cucumber Salad Recipe

There is nothing better than homegrown cucumbers. For this super quick, super easy Cucumber Salad recipe you’ll combine cucumbers, vinegar, mayonnaise, and onion, among other things, to create the perfect summer salad.

Summertime Cucumber Salad Recipe

Make sure you get a little of the juice on every spoonful! The secret is in the sauce. 😉 Take this to your next BBQ. Every time we make this for a get-together it is a hit!

Cucumber Salad Recipe

  • 2 cucumbers
  • 1 onion
  • 1/4 Mayonnaise
  • 1/4 cup white or red wine vinegar
  • 2 TBL vegetable oil
  • 2-3 TBL sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dill weed

Slice cucumbers and onions, put in large bowl/container and set aside.

In separate bowl combine mayonnaise, vinegar, oil, sugar, salt and pepper and, using a whisk or spoon, stir until smooth.

Pour dressing over vegetables, gently stir and then sprinkle dill weed over top right before you’re ready to serve.

How easy is this summertime salad? I love the zing in the juices, so be sure to get a spoonful with each bite.  If your homegrown cucumbers are on the bitter side the best way to remove that twang is by removing the skin. But, there is a trick to remove that bitterness from cucumbers without peeling the entire thing.

  1. Ash can you or someone please tell me why sugar is added? I have seen sugar in many coleslaw recipes and similar. I usually omit and seriously don't miss it...I think. As someone who has to cut back on sugars, I at times avoid a recipe. thanks
