Winter Kale Soup Slow Cooker Recipe

Don’t leave if you don’t enjoy kale. Perhaps you’ve not tried it in a recipe you have enjoyed… yet? In fact, this may be just the recipe for you to learn to love it.
This Winter Kale Soup is low-fat, low calorie and low carb but not low on flavor! Another reason to give this recipe a try? It requires very little preparation and just a few ingredients as well. Yes, it has kale. As I mentioned above, this is the perfect recipe for beginner kale eaters. Cheers.
My crock-pot gets a workout all year long, but I’ve noticed that in the fall months, I get this sense of homey comfortable coziness that is only enriched by the smell of soup simmering in the slow cooker. Hand me a warm cup of coffee and my scarf and boot cuffs I’m ready to go.
I’m excited already.
Winter Kale Soup Slow Cooker Recipe
1 small onion, diced
1 bunch kale (you can use 1/2 if trying kale for the first time 😉 )
1 can ANY white bean – rinsed and drained (navy bean, white kidney bean, etc)
1 pkg dry Italian dressing
1 lb carrots, sliced
1 lb ground turkey (or ground chicken)
1 carton chicken broth (8 cups)
In the slow cooker, add the raw (coarsely crumbled) ground turkey. Next add in the diced onion, carrots, beans, and seasoning, then the chopped kale and the chicken broth. Cook on high 4 hrs or low 8 hrs.
This recipe yields 8 servings.
Give it a quick stir and break up any large pieces of meat. Serve.

Place all ingredients except chicken stock in a freezer bag. This will freeze well for up to 6 months. To use; place in the fridge the day before to allow it to thaw. Empty the ingredients into the slow cooker and then add chicken stock. Cook on low 8 hrs or high 4 hrs.
