Quick and Easy Salmon Patties

Ahhh, salmon patties. I love to eat mine with just a little bit of mayonnaise, my husband is a ketchup user. Either way is great, and even if you don’t usually like fish, these are fantastic, frugal and easy to make. Pairs nicely with mashed potatoes or with roasted brussel sprouts or another vegetable.
This recipe yields four patties.
Quick and Easy Salmon Patties
Ingredients:
(1) can of pink salmon (14.75 oz.)
1/2 cup of Panko Japanese Style Bread Crumbs (or may substitute with crushed saltines)
(1) large egg
(2) Tbsp. Mayonnaise
(1) Tbsp. lemon juice
(1) tsp. Dill Weed
(1) celery stalk (finely diced)
1/4 cup green pepper (finely diced)
1/4 cup onion (finely diced)
1/4 tsp. Thyme
Directions:
Take your celery, green pepper, and onion, season with a little salt and pepper and saute in skillet with a little olive oil until light brown in color and set aside. Meanwhile, in large bowl take (drained) salmon and remove any bones or skin that may be present. Add egg, panko, mayonnaise, lemon juice, dill weed and sauteed vegetables to the salmon and knead mixture together.
Form four hamburger-like patties and pan fry in non-stick skillet over medium to medium-high heat until browned (on both sides). Serve with fresh lemon wedges and garnish with leftover dill. Enjoy!
