Let me be honest: If you’re looking for gourmet, this isn’t your recipe.  This casserole is simple and easy and let me tell you… finger lickin’ good. You’ll have to make enough for leftovers.  Every single time we make this dish, we do a double batch.  Mainly because we can polish an entire dish just the four of us (tee hee), but also because I always end up wanting more for lunch the next day.

Never fails.

Ever sweeter? This dish is SUPER inexpensive to make.  Score!!  You could easily add more potatoes to make it more filling without having to add more meat.

Poor Man’s Smoked Sausage and Pepper Casserole Recipe

Ingredients

  • 1 pkg - Smoked Sausage
  • 5-6 potatoes
  • 1 - large onion
  • 2-peppers, choice of color
  • 1 - 8 oz package of shredded cheese
  • 1 tsp of minced garlic
  • 2 TBL Oil
  • Cavender's Seasoning (optional)
  • Salt & Pepper (to taste)

Instructions

  1. Preheat oven to 350.
  2. Drizzle a bit of olive oil on the bottom of a baking dish. Peel and dice enough potatoes to line the bottom of your dish. Top with 1 tsp of minced garlic.
  3. Sprinkle with salt and pepper (we also add Cavender’s seasoning). Dice half an onion, remove core and membrane from peppers and dice. Slice smoked sausage.
  4. Layer ingredients starting with potatoes (lining the pan) then onions and peppers, followed by the sausage. Cook for 35-40 minutes (ovens time/temps may vary), add cheese and cook for another 5 minutes.
  5. Enjoy!
